Easy Cookies
1 (18.25 ounce) package vanilla flavored cake mix
2 egg yolks
1 cup butter
1 teaspoon vanilla extract
1/3 cup granulated sugar for decoration
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Beat egg yolks and margarine together until well blended. Stir in
vanilla. Gradually add cake mix while beating with an electric mixer.
Mixture should be stiff. If it is sticky to the touch, refrigerate for
20 minutes.
3.Form teaspoonfuls of the dough into balls, and roll in sugar. Place on
ungreased cookie sheets.
4.Bake at 350 degrees F (175 degrees C) for 11 minutes for soft cookies,
and for 13 minutes for crispy cookies.
Easy Oatmeal Cookies
1 cup raisins
1/2 cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
1/2 cup chopped walnuts
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla extract
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot
water and set aside.
2.In large bowl, sift flour with soda, salt and spices. Blend in rolled
oats, sugar and nuts. In a separate bowl, beat eggs with fork and add
oil, vanilla, and raisins and water mixture. Pour into dry ingredients,
stirring until well mixed. Drop by teaspoonfuls about two inches apart
onto ungreased cookie sheets.
3.Bake 10 to 13 minutes in the preheated oven, until the edges are
golden.
